Zeke Ferguson is the retail manager of Valley Shepherd Creamery’s newly opened outlet located in the Reading Terminal Market. The farm and actual Creamery are located in Long Valley, NJ. Their spot at the Market features a retail cheese counter, an onsite cheese making facility, and sells artisan prepared foods. This seminar was both educational and tactile with a cheese lesson and also a tasting of cow, goat, and sheep cheese paired with wines.

Anyone who knows anything about the Philly Restaurant scene should know who Christopher Kearse is and his dedication to good food and where his ingredients are grown and produced. Chris has always supported Slow Food and was instrumental this past summer in helping to organize our dinner at Pumpkin Restaurant on South Street so we felt that we wanted to show our support to his new venture in South Philly.

Our first seminar of the year highlighted 7 Italian wines (4 whites and 3 reds) that were chosen for the Slow Wine Guide of 2013 which is being kicked off in the US in NYC on January 28th at Three Sixty right before the Gambero Rosso tasting. For 20 years, Slow Food co-published the Italian Wines guide with Gambero Rosso, arguably the most famous and influential wine publication in Italy. The much sought-after “three glasses” awards stimulated producers to aim for maximum quality, hence to change the Italian wine scene and its image abroad. But the Slow Food quality criteria have developed in the meantime; they now embrace more than just sensory virtues and also incorporate ethical and environmental values. A wine cannot be judged by scores, symbols or other numerical evaluations, but needs to be assessed in a broader context. To describe this reality, it is essential to leave tasting rooms and travel to the vineyards and their wineries. More than 2,000 cellars were visited, thousands of vineyards scaled, hundreds of firsthand interviews conducted and countless questions asked. The new concept means that the guide centers around the agronomical efforts of cellars, describing vines planted, vineyards tended and the philosophy underpinning the work of winemakers.

Philly Fair Trade Roasters, Joe Cesa who has a culinary background (starting as a Restaurant School grad) opened Philadelphia’s first fair trade coffeehouse in 2002. Joe explained the differences of coffee grading; fair trade vs. conventional market coffee and the living and working conditions of the producers; techniques pertaining to small-batch roasting; and doing some coffee tasting. Coffee has become an art form so here is a chance to learn all about the nuances of appreciating a good cup of Joe. Because it was the holiday we wanted to combine it with a selection of 3 After Dinner Digestive Spirits that complement a good cup of coffee. This part of the meal gets little respect. We are always in a hurry to rush away from the table, so we introduced some suggestions for you to relax and allow the food to digest and the conversation to flow.

This amazing food event brings producers from around the world including wine, beer, cheese, fish, pastry, pasta, coffee and more in a variety of workshops, tasting exhibits, and dinners. Terra Madre is a conference that brings together all walks of the food community for workshops and discussions and for the first time is open to the public. There was no preselected delegation from our region and all were encouraged to attend this educational and inspirational experience.

Kallari Cacao Growers Cooperative from Ecuador in a rare visit to Philly provided an in-depth seminar that included a great video presentation of their cacao farms along with a tasting of their amazing chocolate. Kallari produces some Fair Trade certified (October is Fair Trade month) and some that are Direct Trade (raw material purchased directly from farmers without trader’s or brokers). Farmer-Owned chocolate like Kallari is a step beyond Fair Trade because the farmers also receive the profit margin of making their own chocolate. A must for all chocolate lovers.

Philadelphia Distilling Company is a local artisanal distillery, makers of such great products as Penn 1681 Vodka, Bluecoat Gin, Vieux Carre Absinthe, and Shine Whiskey. The Best Bars in Philly all have these great local spirits on their back bars. Here is an opportunity to learn all about craft distillation followed by cocktail recipes you can make at home (and of course tasting) by their Ambassador Meredith Maciolek.

Our annual partnership project with Farm to City was once again held at the Shambles at New Market and we put a spin on this year’s event by inviting a variety of Food Trucks to provide the menu and a great selection of local brewers, along with Market and Food Demos. Food Trucks included Vernalicious, Sweet Box, Foo Truck, Zea May’s, and Chez Yasmine. Our local brewer samplers included Philadelphia Brewing Company, Earth –Bread + Brewery, Victory, and Stoudt’s.

We invited Ryan Kuck and Suzanna Urminska, urban farmers and founders of Preston’s Paradise, an all-volunteer community resilience project based in the Belmont neighborhood of West Philadelphia. Their projects include a farm stand, providing community meals, workshops, urban agriculture and other community based support projects which they shared with us.

Tegan Hagy, owner and confectionary creator of LoveBar Chocolate, led this informative seminar discussing the process of how they take cacao beans and process them into chocolate bars. The tasting portion matched Bruichladdich Islay lightly peated Scotch with LoveBar chocolates and it was a match made in heaven.

We celebrated Philly’s Slow Food with an amazing 5 course collaborative Seafood dinner with Philly’s best Chefs! Each Chef (Pumpkin, Stateside, Fond, Lacroix, & Bibou) prepared a course showcasing their unique talents. Proceeds were donated to Philly Farm & Food Fest held on Sunday, April 1st. Slow Food Philly donated box lunches provided by Feast Your Eyes Catering to vendors and volunteers.

Trey Flemming is one of the leading authorities on beekeeping in our region and owner of Two Gander Farm and Apiary with over 70 colonies. Trey went over the basics of beekeeping and how to get started in this fascinating work. Trey works with many city residents who raise bees right here in the city. We had a honey tasting and mead.

We had the privilege of having Dr. Solomon Katz, coauthor of the Encyclopedia of Food and Culture, host this discussion. This discussion included understanding food terms such as sustainable, biodynamic, organic, free range, no hormone, grass fed, humanely raised and how it all relates to our past and our present. There was also food sampling and wine.

We listed their link to neighborhood garden plots on their website and they offer a wealth of information to get you started. Casey Spacht is a dynamic food resource here in our area and if we offered a Slow Food curriculum, Casey’s seminars would be a requirement. Casey is an organic farmer who is also the General Manager of the Lancaster Farm Fresh Cooperative which works with 75 local organic family farmers and food producers in the Lancaster area. Casey is also a wild foods forager (paw paws, morels) and an herbalist who runs a CSM (Community Supported Medicine Program). For this seminar we tasted a variety of seasonal greens and a wine tasting provided by Slow Food.

This seminar featured a group of local farmers who produce sheep, goat and cow cheeses and are associated with PASA (Pennsylvania Association for Sustainable Agriculture). This was a great opportunity to meet local producers who raise their livestock in a humane and natural environment. Jenny Harris explained how to identify and enjoy the unique flavor profiles of these various excellent cheeses. We provided wine pairings. The cheese makers offered their cheeses for sale after the seminar.

Participants included the area’s most celebrated restaurants, breweries, and local distilleries – all independently owned and located within 150 miles of the city. The world of wine has changed dramatically in the last 25 years with the addition of new technology, flying winemakers, and the rise of corporate consolidation and takeover. When you enter a store you are invaded by displays, marketing gimmicks, creatively designed labels, and promotions. That is the part of the wine experience that needs to be demystified for you, the consumer. You need to be better equipped with an education on wine marketing rather than wine appreciation. After revealing some trade secrets we discussed the real regions of the wine world to give you a better understanding of local varietals that grow in those regions and not the usual varietals that seem to grow everywhere and anywhere. We tasted 6 wines, 3 whites and 3 reds that are indigenous to their respective regions and opened you up to where it all started with small farmers growing grapes that have been grown in their regions for a long time.

Inspired by Slow Food International’s recent Salone del Gusto food show and Terra Madre conference in Turin, Italy, Reading Terminal Market held a day of celebration to honor local food producers and artisans. With support from Slow Food Philadelphia, Fair Food, PASA, Grid and Philly Homegrown, Terra Madre Day gave Philadelphians the opportunity to meet select regional producers, watch cooking demonstrations and learn about the tastes and flavors from the Greater Philadelphia area. We also took this opportunity to give back by presenting a donation to Farm to Families.
