“One of our company’s key tenets is partnering with farmers in our local food shelf (within 150 miles) and using their high-quality, sustainably grown (and humanely raised) ingredients while directly bringing the farm community and the dining scene together through our pop-up dinners at farms and other unique venues.

We utilize several Snail of Approval farms/CSAs/vendors, including Fair Food Farmstand, Zone 7, River & Glen, and Lancaster Farm Fresh, and have worked with a multitude of other excellent farms and producers in the area, including North Star Orchard, Green Zebra, Hillside, Valley Shepherd Creamery, 1732 Meats, Urban Roots Farm, etc.

Additionally, we have ongoing relationships with nonprofits such as Riverbend Environmental Education Center, Red Hill Farm, and the Dorrance H. Hamilton Center for Culinary Enterprises.

We recycle, compost (and are working on special compost for animal farms), and we’re planning to move to renewable energy as we grow. In short, we’re a permaculture-based business.”
